As most of you know, I am by no means a cook. I can barely get myself around my own kitchen without almost setting the house on fire. After I hurt my knee - I have spent more time inside since April, then I ever have in my entire life. Not being able to stand without crutches has still diminished my dreams of being Chef Gordon Ramsey, but with some help, I have been experiencing with vegetarian snacks recently. I came across a recipe for Energy Bites, and put my own twist on it. These energy bites can be passed off on any amazing dessert bar, and they would have fooled me.
- ⅔ cup creamy peanut butter
- ½ cup semi-sweet chocolate chips
- 1 cup old fashioned oats
- ½ cup ground flax seeds
- 2 tablespoons honey
Mix ingredients in a medium bowl - stir to combine
Refrigerate for 15-45 minutes
After refrigerated , roll into 12 bites and place them into the fridge for up to a week
If after a week passes, throw the bites into the freezer
They are the perfect mixture of cookie dough and a granola bar - and when craving sugar, they are a great little snack alternative.
